Trentenne inglese di origine colombiana Laura Pabon ha ideato il concetto di pizzeria Luxe. Con determinazione e' riuscita ad aprire il primo punto vendita all'interno di un importante centro commerciale all'ingresso del London Olympic Park. Ed e' solo il primo!
1) Tell us something about your work experience in the
food business and how you got to open PizzaLuxe. (Raccontaci quail sono le tue esperienze nel mondo della ristorazione e come hai aperto PizzaLuxe.)
I am a highly experienced General
Manager with a proven track record in customer service delivery for high-class
restaurant and bar operations. I am a very business-focused manager with
excellent man-management ability and the highest standards of operational
training and delivery. I have previously managed numerous quality
London restaurants including Maze Bar & Grill and Zuma.
Starting you own business is a
demanding and stressful undertaking! I started my company,
"PizzaLuxe", in 2010 in a stall market selling gourmet pizzas. A
year later, I pitched for my first unit at Westfield Stratford-City, at the
gateway to the London Olympic park.
2) Which are the "ingredients" that made you
become who you are? (Quali sono gli ingredienti che vi contraddistinguono?)
In general, I
use the best ingredients in the market but my famous ingredient has to be my
secret recipe tomato sauce. My Bufalo mozzarella also stand out, we
buy it fresh from Naples every day.
3) Do you use special recipes/ingredients to seduce? (Che ricette usi per sedurre?)
The most
important recipes in my business is the one that makes me different from everyone else
- my secret dough recipe. The dough rests for 48 hours, releasing the
yeast very slowly before we create a very thin pizza base.
4) Is there a recipe that brings you back to an eventful
memory in your life? (Quale ricetta ti ricorda un momento felice della tua vita?)
My Pollo
pizza has a white sauce base made with truffle tapenarde takes me back to
some of my experiences working in Zuma London - the aroma of truffle is so
unique and so good on the palate. The scent of truffle always takes me
straight back to those happy days.
5) What is you favorite movie related to food? (Quale film associ al cibo?)
Easy,
Ratatouille! Not a very Art-house choice, but I love Disney and Pixar. I
wouldn't invite him to my restaurants though…

6) Please tell us the secrets of one of your recipes: a
special pizza that you serve in your restaurant. (Raccontaci il segreto di una pizza speciale che servi da PizzaLuxe.)
The secret of my recipes is to put together
ingredients which normally you wouldn't see together, ingredients which
are unlikely to be used on a pizza. My most popular pizza in my menu is
the "Agnello"; people don't associate pomegranate in a
pizza but it works really well with feta cheese, mint, rocket and
carpaccio of lamb. That is a sexy pizza.
Luxe is for LUXURY! The best pizza in town! Brava Laura!
